If you’re on an unsupported version of macOS, your Office apps will still work but you would no longer receive any updates including security updates.

Note that new installs of Microsoft 365 for Mac also requires macOS Big Sur 11 or later. Upgrading your operating system to macOS Big Sur 11 or later will allow Office updates to be delivered for your apps. If you continue with an older version of macOS, your Office apps will still work, but you'll no longer receive any updates including security updates. Starting with the November 2022 update (16.67) macOS Big Sur 11 or later is required receive updates to Word, Excel, PowerPoint, Outlook, OneNote, and Defender.
